Nikko Bali Resort and Spa - A LITTLE TECHNIQUE, A DASH OF PASSION AND A DROP OF TASTE

When it comes to a world where technique plays a big part in one's career, you can only expect to have the best from someone with more than 20 years experience. But it is not always about the technique for Christopher John Patzold, it is so much more.

Chris attended the Box Hill College back in his homeland, Australia where he sort of fell into the world of cooking. "I cannot really remember how I started, my mom and I just sort of fell into the hospitality". He tried brick laying at first but then decided to start a dishwashing job before an apprenticeship was offered to him and took him to where he is today.

Arriving in Bali 10 years ago, Chris had the honor of being the opening team of the now famous dining venue in Bali, Kudeta. "It was magnificent, I've never seen so many rice fields before" he said when asked of his first impression of the island, "Now Bali has grown so much and it never cease to amaze me".
After Kudeta, Chris went to Jakarta to take charge of a Pan Asian fine dining restaurant before coming back to Bali and join the well-known Canggu Club for 2 years. He then worked at Sentosa Private Villas and Spa for nearly 3 years. There, he took charge of Blossom, a modern Australian (global) restaurant with Asian/Thai twist, the villas' in room dining, conference facilities and the catering.

Over the years he spent in Indonesia, especially in Bali, he is always inspired to help others achieve their dreams, "I've seen one or two of the people I worked with now gracing the cover of a magazine with a medal and a big smile on their face. They have really kicked on in the hospitality industry". Having gone through so many unique experiences on the island, he finds it difficult to leave. "Whenever the chance comes to leave, something always holds me back and another opportunity arises". For Chris, Bali is not just a work place; the island has now become a part of him, as he proudly says "Bali is my life".

Chris Patzold is now the Executive Chef of Nikko Bali Resort and Spa. He will be overseeing 4 restaurants and other outlets, including the resort's signature restaurant, The Shore.
